The sudden return of the cold makes me just want to soup! I therefore the ball the opportunity to prepare and offer this Vegan soup in thai style ethnic-inspired my soup, completely vegan, gluten-free and lactose-free, but really tasty because as I always say: “anything cooked in coconut milk becomes delicious!”
The recipe, as I said, is made without lactose and gluten and therefore meets the requirements of the contest The child’s Garden blog Without intolerant is good. The idea that brings me to present this recipe is to start children in General, but in this particular case the children with allergies, Eastern-flavored, taking advantage of the goodies of coconut milk to make them appreciate the vegetables!

Vegan soup in thai style
preparation time: 10 ‘ | difficulty: easy | cooking time: 15 ‘ |
Ingredients for 1 person
200 ml coconut milk
125 grams of tofu, cubed
Broccoli tips 3 halved
1 onion, cut into quarters
2 chard cut into strips
1 spinach they punch cut into strips
1 teaspoon of peas
or other vegetables you like (eg. tomato cut into quarters or mushrooms)
1 teaspoon sugar
1 teaspoon soy sauce
juice of half a lemon
spices that are not eaten (are those spices which in the Eastern tradition bring you in the soup to give it flavor but they leave on your plate):
1 piece lemon peel
1 cm of galangan (or ginger), sliced
5 cm lemongrass cut diagonally into thick slices

Preparation:
Put into a saucepan (or in wok) coconut milk and potatelo a low boil over medium heat, then add the lemongrass. Ginger and lemon zest and let them simmer for 5 min.
Add the tofu into cubes, then the vegetables, starting with onion, broccoli, peas, tomato and/or mushrooms, spinach and Swiss chard leaves last taking hold.
Add salt with soy sauce and add sugar to balance the flavor.
When the vegetables are cooked, shutting off the heat add lemon juice.
Serve garnished with fresh basil enjoy this nice warm Vegan soup in thai style, I’m sure you will also like children!!
