INGREDIENTS
for the filling:
150 g amaretti biscuits
300 g ricotta
100 g sugar
1 whole egg
to the outside:
1 whole egg
300 g flour
100 g butter at room temperature
100 g of vanilla sugar
1 pinch of salt
1 sachet of baking powder (optional)
PROCEEDINGS
First prepare the stuffing. Crumble the macaroons and place in a bowl where you will add the ricotta, sugar and egg, then mix well all ingredients.
Proceed to the preparation of the pastry. Mix in a bowl the flour and sugar together with the pinch of salt and the yeast, then add the egg and butter into small pieces and with the hands begin to form crumbs by sliding the thumb on the other fingers with the pieces of butter, until all are crushed and the crumbs will not all be homogeneous.
Grease and flour a baking tray hinged from 26 cm, roll out half the pastry crumbs on the bottom of the Pan, then place the cream of the filling, making sure to leave a cm away from the edge, now cover with remaining crumbs.
Bake in preheated oven 180° for 60/70 min. in convection mode controlled cooking with a toothpick.
